Chickpeas are a key ingredient in many Middle Eastern and Eastern dishes, the most famous being hummus and falafel. But their use doesn’t stop there – you can make plant-based burgers, dumpling fillings, pâtés, or vegetable spreads.

How to cook chickpeas

Soak chickpeas for about 10–12 hours – overnight works best. Then drain, rinse under running water, and cook in fresh salted water for about 60 minutes. You can add salt right away or even a teaspoon of baking soda, which will help speed up the cooking process and result in a creamier, buttery texture.
