No-Bake Mazurek – A Vegan and Gluten-Free Recipe for a Healthier Holiday Treat

No-Bake Mazurek Recipe

This Mazurek doesn’t need an oven, and it’s super easy to make!
You’ll need:

350g dates

120g almonds
-
120g cashews
-
100g oat flakes
-
30g flaked almonds

1 tbsp coconut oil
First step:
Soak the dates – overnight in a bowl of water or about 45 minutes beforehand using hot water (just enough to cover the dates). You can also soak the cashews for 45 minutes in hot water – the caramel cream will be smoother.
Base:

120g almonds

100g oat flakes

140g dates (well-drained)
Grind the oat flakes and almonds separately into flour, then combine with the dates in a blender and knead into a dough. Press the dough into a baking dish (approx. 19 cm x 28 cm).
Caramel cream:

120g soaked cashews

the remaining dates
-
1 tbsp coconut oil
Blend the cashews into the smoothest possible paste – ideally a nut butter consistency (a few small lumps are fine). Separately blend the soaked dates, gradually adding some of the soaking water until you get a thick, caramel-like cream. Mix both pastes (preferably blend them together), add the melted coconut oil, and stir well. Spread the creamy mixture over the base.
Now it’s time to decorate!
We recommend flaked almonds, but feel free to go wild with dried apricots, figs, or whatever your heart desires!
