Salad Jar – a High-Protein Veggie Lunch in Just 15 Minutes!
A jar salad is a quick, healthy, and high-protein lunch you can prepare in just 15 minutes. Some of the ingredients come from the biossom.bio store – for this recipe, I used my favorite high-protein quinoa, chickpeas, and fresh lemon juice.
Salad Jar – Ingredients
For the dressing:

5 tablespoons lemon juice

5 tablespoons olive oil
-
5 tablespoons balsamic vinegar
-
Flat teaspoon of salt and pepper
For the salad:
-
Half an onion, finely chopped
-
3/4 cup quinoa
-
1 long green cucumber, diced
-
Half a jar of sun-dried tomatoes
-
1 jar of chickpeasin brine or 250g of cooked chickpeas
-
1 block of tofu, cubed
-
A bunch of fresh parsley
Salad Jar – Instructions

Prepare 3 tall jars.

Cook the quinoa in lightly salted water (1:2 ratio).

Mix the dressing ingredients and divide evenly between the 3 jars.

Layer the ingredients in the following order:

tofu
-
cucumber
-
onion
-
sun-dried tomatoes
-
quinoa
-
parsley
-

Let sit for a while to allow the tofu to marinate in the dressing.

Before serving, pour the contents of the jar into a bowl and mix well. Enjoy!
